Aloo vada is one of the popular street food in Maharashtra and Madhya Pradesh.  It is also the key ingredient in the vada pav the popular mumbai street food recipe . Aloo vada is made up of potato balls and best serve with the green chili or mint chantey


  • 5 medium size potatoes
  • 10 curry leaves
  • 1 mustard seeds, Cumin seeds
  • 2 Green Chili chopped
  • 1 tsp Chopped ginger
  • 1 tsp turmeric powder
  • Pinch of asafetida
  • Coriander leaves
  • Oil to fry
  • Pinch of baking soda
  • Salt to taste
  • 2 cups gram Floor /Besan
  • Water to make batter


Step 1

Boil the potatoes peal the skin and Mash it properly . heat up a pan and add some oil in it add mustard seeds and crackle them now add cumin seeds , Curry leaves , chopped ginger ,green chilies asafetida. Mixed it well and cook it, now add turmeric powder , salt to taste and mashed potatoes and mixed it well and cook it for 2 minutes. Now leave it for 2-3 minutes and after that make small ball to make vada.

Step 2

Take a bowl make a smooth better using water and 2 cup besan/ gram floor add some chili powder, pinch of baking soda and salt.

Step 3

Heat up a pan and oil to deep fry the vada’s . Dip the potatoes balls gently in the better and coat them properly and drain it into the hot oil to fry, Fry it on medium flame till it turns golden brown drain the extra oil. Do the same for other vada’s as well .Now the aloo vada is ready to serve
