Chestnut, Meringue and Chocolate Mousse Cake

Ingredients:
Meringue:
4 egg whites
200 gm sugar
A pinch of salt
Red food colour
Sponge:
4 eggs
100g sugar
200 gm chestnut puree
30 gm butter
1 teaspoon vanilla essence
50 gm corn flour
1 pinch baking soda
Filling:
475 ml cream
180 gm dark chocolate
2 packets of cream stabilizer, optional
The name itself tells one of the primary ingredients of the cake. To prepare the meringue, just whisk the egg white, sugar, salt and the colour for some time and then bake it. Once done, let it cool and then crumble the meringue. For the cake, whisk the yolk with sugar until creamy and keep it aside. Now, heat butter and mix the chestnut mixture along with it and then add this mixture into the egg yolks along with the vanilla. Now separately beat egg whites and pour it into the batter and then bake it in a pre-heated oven for 30 minutes. Now cut the cake into half and fill it with a mixture of chocolate and cream turning it into a piece of visual treat. You can then design the cake as per your choice and styles.
