How to make Matthe aaloo ki sabji?
Potato is considered to be the king of vegetables as it can be made with so many combinations and it never lets the taste down. Matthe aaloo ki sabji is a healthy and tasty option for lunch or dinner. This recipe fulfils two needs together, the taste of boiled spiced up potatoes along with the heavenly taste of curry and for this reason that it is my family favorite.
- Mattha(curd) - ½ kg sour
- Potato – 4 boiled
- Cumin seeds- ¼ tsp
- Salt to taste
- Curry leaves- a few
- Asafoetida- a pinch
- Red chilly powder- ¼ tsp
- Turmeric powder- ¼ tsp
- Coriander powder- ½ tsp
- Oil- 1 tsp
- Coriander leaves- 1 tsp finely chopped
Peel off the potatoes and cut them into pieces. Now take a bowl, add mattha, turmeric, red chilly powder, coriander powder, salt and mix them thoroughly.
Now take a pan, heat oil and put jeera, asafetida and curry leaves into it. Add the mattha mixture in the pan and stir continuously. After stirring for two minutes, add potatoes into it and again stir to avoid tearing of the batter. After two minutes, leave it for a few minutes on low flame. Then, add coriander leaves, switch off the gas and cover the pan with lid. If you like blend of sweet and sour taste, you can also add a little sugar. The sabji is ready, serve it with roti and enjoy.
